Description

Ingredients

  • 2 cups grated zucchini
  • 1 cup almond flour
  • 1/2 cup cocoa powder
  • 1/2 cup maple syrup or agave syrup
  • 1/2 cup plant-based milk
  • 1 teaspoon baking powder
  • 1/2 teaspoon vanilla extract
  • 1 pinch of salt
  • Vegan chocolate chips (optional)

Instructions

  1. Preheat the oven to 180°C (350°F) and line a baking dish with parchment paper.
  2. Combine grated zucchini, maple syrup, plant-based milk, and vanilla extract in a large bowl until well mixed.
  3. Mix almond flour, cocoa powder, baking powder, and salt in a separate bowl.
  4. Add the dry ingredients to the wet ingredients and stir until no dry flour remains.
  5. Fold in the vegan chocolate chips if desired.
  6. Transfer the batter to the baking dish and smooth the top.
  7. Bake for 25-30 minutes; test with a toothpick to ensure they are done.
  8. Allow the brownies to cool in the pan before cutting them into pieces.

Notes

Ensure the zucchini is well-drained to avoid excess moisture. These brownies can also be prepared in an air fryer, reducing the baking time to about 20 minutes.
