Instructions
- Preheat the oven to 180°C (350°F) and line a baking dish with parchment paper.
- Combine grated zucchini, maple syrup, plant-based milk, and vanilla extract in a large bowl until well mixed.
- Mix almond flour, cocoa powder, baking powder, and salt in a separate bowl.
- Add the dry ingredients to the wet ingredients and stir until no dry flour remains.
- Fold in the vegan chocolate chips if desired.
- Transfer the batter to the baking dish and smooth the top.
- Bake for 25-30 minutes; test with a toothpick to ensure they are done.
- Allow the brownies to cool in the pan before cutting them into pieces.
