Description

A delicious and moist Oatmeal Carrot Cake that combines the goodness of oats and the sweetness of carrots, spiced with cinnamon.


Ingredients

  • 1 cup oats
  • 1/2 cup sugar or honey
  • 1/2 cup neutral oil (like sunflower or canola)
  • 3 eggs
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • Optional: nuts (walnuts or almonds)
  • Optional: cream cheese frosting

Instructions

  1. Preheat your oven to 180°C and grease the cake pan.
  2. Mix the eggs and oil in a large bowl until creamy.
  3. Add sugar or honey and stir until well combined.
  4. Incorporate grated carrots and oats into the mixture.
  5. In a separate bowl, mix the dry ingredients: cinnamon, baking powder, and salt, then gently fold into the wet mixture.
  6. Pour the batter evenly into the prepared cake pan.
  7. Bake for about 30-35 minutes until golden brown.
  8. Cool in the pan and decorate with nuts or cream cheese frosting if desired.

Notes

For moisture, always use freshly grated carrots instead of pre-prepared ones. Avoid over-mixing the batter.
