Instructions
- Preheat your oven to 180°C and grease the cake pan.
- Mix the eggs and oil in a large bowl until creamy.
- Add sugar or honey and stir until well combined.
- Incorporate grated carrots and oats into the mixture.
- In a separate bowl, mix the dry ingredients: cinnamon, baking powder, and salt, then gently fold into the wet mixture.
- Pour the batter evenly into the prepared cake pan.
- Bake for about 30-35 minutes until golden brown.
- Cool in the pan and decorate with nuts or cream cheese frosting if desired.
Notes
For moisture, always use freshly grated carrots instead of pre-prepared ones. Avoid over-mixing the batter.
